Brand Story
Baiji originated in Tianjin during the late Qing Dynasty and early Republic of China, with its exact founding year unverified. Founder Bai Xingheng (c. 1850-1920) started a stall selling beef pies near the northwest corner of Tianjin, gaining a reputation for quality ingredients and precise cooking. His son, Bai Wenyuan (1880-1950), established a fixed shop in Hongqiao District in the 1920s, officially adopting the name 'Baiji'. At that time, Tianjin was a major commercial hub in the north, and the Muslim community's culinary culture thrived. Baiji became a local favorite for its freshly baked beef pies and unique seasoning. After the public-private partnership in 1956, Baiji was integrated into the state-owned catering company, with the craft passed to the third generation, Bai Qinglin (1925-2000). Following the reform and opening-up, Baiji resumed private operation, now led by the fourth generation, Bai Jianqiang (b. 1960), who insists on traditional handmade methods. Baiji bears witness to Tianjin's modern urban changes and the fusion of Muslim dietary culture, with its pies featuring crispy crusts and juicy fillings, a taste memory for generations.
