Sanhe Simei pickles trace their roots to Yangzhou's sauce workshops during the Qing Jiaqing era (1796-1820). Sanhe Sauce Garden, founded in 1796, embodied the harmony of color, aroma, and taste. Simei Sauce Garden, established during the Daoguang era (1821-1850), drew its name from the classic 'Preface to the Pavilion of Prince Teng,' celebrating four perfections. In 1956, the two merged into Yangzhou Sanhe Simei Pickle Factory. Their pickles are prized for freshness, sweetness, crispness, and tenderness, crafted through traditional sun-drying and fermentation. Reflecting the refined Huaiyang culinary style, they remain a beloved accompaniment to meals, symbolizing the region's salt merchant culture and modern industrial heritage.
