While most lu zhu vendors operated casually, Xiaochang Chen insisted on fresh daily preparation, using pork intestines, lungs, tofu, and flatbread simmered in a rich, hearty broth. Through wars and social upheaval, the family tradition endured. The fourth-generation heir, Chen Xiufang, revived the brand after China's reform and opening-up, dedicating herself to preserving this culinary art. Today, Xiaochang Chen stands as a symbol of Beijing's snack culture, its story chronicled in the Beijing Annals.
