Juchunyuan was founded in 1865 (the fourth year of Emperor Tongzhi's reign in the Qing Dynasty) by Zheng Chunfa in what is now Gulou District, Fuzhou. Zheng learned cooking in the capital in his early years and later returned to his hometown, where he opened the Juchunyuan restaurant. His most famous creation is Fotiaoqiang, a dish made with dozens of premium ingredients such as sea cucumber, abalone, and shark fin, slowly simmered in a sealed jar. The aroma is so rich that it is said 'the scent wafts to neighbors, and even Buddha jumps over the wall to taste it.' Juchunyuan is renowned for authentic Fujian cuisine, emphasizing freshness, fragrance, lightness, and crispness, with a focus on knife skills and cooking techniques, especially soups. Over more than a century, through wars and changes, the restaurant's skills and spirit have been passed down through generations, making it a vital symbol of Fujian culinary culture. In 2008, the cooking technique of Fotiaoqiang was inscribed in the National Intangible Cultural Heritage list, highlighting its cultural value.
