Moutai is produced in Maotai Town, Renhuai City, Guizhou Province. Its brewing history dates back to 135 BC during the Western Han Dynasty, when a local liquor called 'goujiang' was already presented as a tribute to the emperor. During the Ming and Qing dynasties, the town's brewing industry flourished, and by the Qing Dynasty, several distilleries had been established. In 1915, Moutai won a gold medal at the Panama-Pacific International Exposition, catapulting it to international fame. In 1951, the government merged three local distilleries to form the state-owned Moutai Distillery, marking the beginning of its modernization. Key figures such as master brewers Zheng Yixing and Ji Keliang have preserved and innovated Moutai's unique brewing techniques. Moutai is not only a symbol of Chinese culture but also a national gift in diplomacy, witnessing countless historic moments.

Moutai's brewing process follows the seasonal rhythm of 'making qu (starter) during the Dragon Boat Festival and laying down grain during the Double Ninth Festival.' It employs the '12987' technique: a one-year production cycle, two feedings of grain, nine steaming cycles, eight fermentations, and seven extractions of liquor. The liquor is then aged for years and meticulously blended. The unique microbial environment, the water of the Chishui River, and locally grown red sorghum contribute to Moutai's irreproducible flavor. In 2006, Moutai's brewing technique was inscribed on the first national list of intangible cultural heritage.
