Founded in 1821 during the Qing Dynasty's Daoguang era, Sanzhenzhai began as a small workshop in Wuzhen, Jiaxing, run by the Shen family. Known for its meticulous selection of ingredients and refined sauce-making, it quickly gained local fame. During the Tongzhi era (1862-1874), the third-generation heir Shen Xirong expanded the business and named it 'Sanzhenzhai', symbolizing three delicacies: soy-sauce duck, braised pork hock, and sauced pork. By the Republic era (1912-1949), its products were sold in Shanghai and Hangzhou, becoming a celebrated Jiangnan specialty. The craft blends the culinary culture of the water towns, emphasizing a rich soy aroma and a balanced sweet-salty taste, representing the traditional food craftsmanship of northern Zhejiang.
