Fuqi Feipian (Couple's Sliced Beef and Ox Tongue in Chili Sauce) originated in 1930s Chengdu, created by Guo Chaohua and his wife Zhang Tianzheng. Initially made from beef offcuts and offal, it gained popularity for its delicious taste and affordable price. In 1933, the couple set up a stall at Banbianqiao in Chengdu, naming it 'Fuqi Feipian' (Couple's Sliced Beef and Ox Tongue). Later, they moved to Zongfu Street. In 1958, during the public-private partnership, it merged into the Chengdu Catering Company and became one of its brands. The dish features beef and offal slices dressed with chili oil, Sichuan pepper, and other seasonings, delivering a spicy, numbing, and savory flavor. It is a representative cold dish of Sichuan cuisine. Despite its name 'Feipian' (lung slices), it actually derives from 'Feipian' (waste slices), a euphemism for the offcuts used. In 2008, the preparation technique was listed as Chengdu's intangible cultural heritage, and in 2011, it was recognized as Sichuan provincial intangible cultural heritage. The brand embodies Chengdu's culinary culture and is a classic symbol of Sichuan's spicy flavors.
