According to the Haizhou Gazetteer, the brewing industry flourished in Tanggou Town in the late Ming and early Qing, earning it the reputation of 'fragrance spreading for ten li'. In the Kangxi era of the Qing Dynasty, Tanggou liquor was selected as a tribute to the imperial court, gaining nationwide fame. Legend has it that a master brewer surnamed Liu from Shanxi, fleeing turmoil, settled in Tanggou and, impressed by the sweet local water, began brewing. His techniques were passed down through generations, forming the unique 'Tanggou style'. Made from premium sorghum and using the traditional 'old five-steaming' process, Tanggou liquor is fermented, distilled, and aged with the local 'Xiangquan' (Fragrant Spring) water. The result is a full-bodied spirit with a mellow, sweet entry and a long, lingering finish, beloved by scholars and literati. The Qing Dynasty poet Yuan Mei praised it in his Suiyuan Shidan as 'clear in color and sharp in taste'. Tanggou liquor is not just a beverage; it embodies the folk culture and brewing wisdom of northern Jiangsu, making it a vital part of Chinese liquor heritage.
