Founded around 1738 during the Qing Qianlong reign, Liuweizhai began as a branch of Beijing's Tianfuhao braised meat shop, opened by master Liu Deshan in Taiyuan. Later becoming independent, its name derives from the five flavors (sour, sweet, bitter, spicy, salty) plus 'fragrance', symbolizing completeness. In the late Qing and early Republic era, it was a must-have for Taiyuan's elite, rivaling brands like Daoxiangcun. The shop ceased during the Anti-Japanese War but resumed after 1949. Its braising craft blends imperial recipes with Shanxi merchant cuisine, reflecting the harmony of Chinese culinary philosophy and serving as a vital symbol of Shanxi food culture.
