Nan'an Pressed Duck
Time-Honored BrandNan'an Pressed Duck · Jiangxi · Founded
Nan'an Pressed Duck, originating from Dayu, Jiangxi, is a traditional cured duck made with time-honored techniques. Known for its thin skin, tender meat, and crisp bones, it embodies the culinary heritage of the Hakka people in southern Jiangxi.
Brand Story
Nan'an Pressed Duck traces its origins to the Ming Dynasty (1368-1644), named after Nan'an Prefecture, the ancient name of Dayu County. According to the Dayu County Gazetteer, during the Wanli reign (1573-1620), locals began curing duck meat in the cold winter months to preserve it, gradually developing a unique technique. By the Qing Dynasty (1644-1911), it had become a tribute delicacy renowned across the land. The craft has been passed down through generations, with the Huang family, known as the 'Pressed Duck Dynasty,' being the most celebrated. In the Qianlong reign (1736-1795), ancestor Huang Wenbing refined the recipe, using local shelducks, coarse salt, and natural spices. Through curing, air-drying, and pressing, the duck meat became firm and flavorful. More than just a food, Nan'an Pressed Duck carries the migration memories and agricultural wisdom of the Hakka people. During festivals, families make it to symbolize reunion and harvest. Today, it remains a symbol of local culture, still crafted by hand.
