Xi Jiu is produced in Xishui County, Guizhou Province, located in the middle reaches of the Chishui River. Its brewing history dates back to the Western Han Dynasty, when Emperor Wu is said to have praised the local 'goujiang' wine as 'sweet and fine.' During the Ming and Qing dynasties, the brewing industry flourished along the river, and the predecessor of Xi Jiu, 'Xishui Wine Workshop,' gained local fame in the Qing Dynasty. In the 1950s, the local government consolidated private workshops into a state-owned distillery, officially naming it Xi Jiu. Under the leadership of master brewer Zeng Qiande, Xi Jiu inherited and innovated the techniques of soy sauce aroma baijiu, developing the unique '12987' process: one production cycle per year, two feedings, nine steamings, eight fermentations, and seven extractions. Xi Jiu's culture blends the regional ecology of the Chishui River, ancient brewing wisdom, and revolutionary spirit, making it a significant symbol of Guizhou's liquor heritage.
