Yunmen Distillery, located in Qingzhou, Shandong, traces its brewing heritage back to the Shang and Zhou dynasties. The Yunmen brand was officially established in 1948 through the merger of several traditional workshops. In 1958, technicians visited Moutai in Guizhou to study sauce-aroma brewing, adapting it to northern climates to create a unique northern sauce-aroma baijiu, earning the nickname 'Northern Moutai.' Yunmen innovates within tradition, developing the 'Four Highs and Two Longs' process: high-temperature starter making, stacking, fermentation, and distillation, followed by prolonged aging and meticulous blending. The liquor is slightly yellow and transparent, with a prominent sauce aroma, a mellow body, and a lingering finish. As one of the standard-setters for Chinese sauce-aroma baijiu, Yunmen embodies the rich liquor culture of Qilu and the deep affection of Shandong people for fine spirits.

Yunmen adheres to traditional sauce-aroma brewing, using local premium sorghum and wheat, and water from Yunmen Mountain spring. The process follows the rhythm of nature: making starter during the Dragon Boat Festival, 'throwing sand' (steaming and mixing grain) on the Double Ninth Festival, then nine steaming cycles, eight fermentations, and seven extractions, followed by at least five years of cellar aging. This method, adapted to northern conditions, yields a distinctive style: 'slightly yellow and transparent, prominent sauce aroma, elegant and delicate, with a lingering empty-cup fragrance.' Yunmen also preserves liquor culture through its museum, showcasing Qingzhou's brewing history.
